This light and easy broccoli salad is a favorite in our house. Easy to prepare ahead of time. A healthy raw broccoli recipe with vinegar dressing and no mayo.

Too many times, I forgot how great broccoli tastes raw. The natural instinct is to cook it. Yet, this healthy broccoli salad recipe will have you thinking differently.

In this twist on the traditional broccoli salad, this recipe has no mayo or no sugar. Instead, you will find minimal ingredients that you know how to say and spell!

For our best version, we use a vinegar dressing.

Ingredients List:

  • Broccoli
  • Dried Cranberries
  • Walnuts

For the salad vinegar dressing on the broccoli salad, you will need:

  • Olive oil
  • White wine vinegar
  • Apple Cider Vinegar
  • Mustard
  • Maple Syrup
  • Minced Garlic
  • Salt
  • Water

How to Make Healthy Broccoli Salad

Shh… Don’t tell anyone how easy this recipe is to make!

Quickly chop the fresh broccoli into bite sized pieces. Personally, I cut off the broccoli trees and then do a course chop. That is about the perfect size.

Add all of the ingredients into one bowl.

Mix well. Stir again to make sure everything is well mixed.

The broccoli salad tastes better when chilled for at least 15 minutes.

Variations Options

There are plenty of ways you can modify this recipe. Some options include:

  • Use sunflower seeds or pecans for the walnuts
  • Use raisins for the dried cranberries
  • Add chopped red onions
  • Add halved grapes

Healthy Vegan Broccoli Salad with Cranberries

This broccoli salad is a favorite in our house. Easy to prepare ahead of time. A healthy recipe without the traditional mayo and calories.

Ingredients

  • 1 pound Broccoli
  • 2/3 cup Dried Cranberries
  • 1/2 cup Walnuts
  • 2 Tbsp Olive Oil
  • 1 Tbsp Apple Cider Vinegar
  • 1 tsp Mustard
  • 1 tsp Maple syrup
  • 1 tsp Garlic, minced
  • 1/4 salt
  • 2 ounces water

Instructions

1. Chop the broccoli into bite sized pieces.

2. Add all ingredients into a bowl.

3. Stir well.

4. Chill broccoli salad in fridge for 15 minutes or until ready to serve.

Notes

If nut free, omit the walnuts or substitute for hemp hearts.
